Mom’s Persimmons was inspired by my own mother. Upon visiting her in Salinas, California, my mom had brought some of her sliced, dried persimmons for me to snack on. My mom had dried them outside in the summer sun, and they were surprisingly soft, chewy, and flavorful. It was incredulous to me that something like this was not very common in the marketplace.
